Easy Egg Salad

This recipe is adapted from Heidi Swanson's 101cookbooks.com. I've been looking for a different portable lunch, and I am happy to say I have found it! I'll post a picture soon.

Ingredients
5 good quality eggs

1 1/2 teaspoons curry powder or
1/4 t each cinnamon, cumin, cardamom, cloves, black pepper

3 tablespoons plain yogurt or mayonnaise
2 big pinches of salt

1/2 small onion, chopped
1/2 medium apple, chopped
1/4 cup pecans, toasted and chopped
several scallions, minced

Hard boil eggs.

Mix spices, yogurt, and salt, and mash gently into eggs. Fold in onion, apple, pecans, and scallions. Season to taste.
