Easy Apple Pork

This used to be one of my favorite recipes, but Mark and I stopped eating pork after he was diagnosed with Crohn's. However, I've had a few requests for pork, so here it is! No pic because I haven't made it in awhile, but if anyone tries this, please take a picture. =)

4 pork chops, sprinkled with salt and pepper
Olive Oil

2 crispy apples, cut into wedges
1 T sage mixed with a few drops of olive oil
3 T butter

about 3-4 ounces of blue, stilton, or naked goat cheese (optional)

Make some cuts in the fat, to render fat and make for a crispy skin. Brown pork chops in olive oil over medium heat, til almost done. Transfer to an oiled baking pan.

Preheat oven to 400.

Saute apples in butter til golden. Place on top of pork chops. Add sage and optional cheese.

Bake for about 5 minutes, til cheese is melted.
