Energy Bar

Mark loves the whole Energy Bar thing. It's quick, easy, and filling. The only problem is what he's actually being filled with. So I decided to tackle an energy bar recipe from Elena's pantry. I made a few modifications, but I stuck to her recipe for the most part. What we have is an amazing super food, filled with protein, nutrients, energy, and not much "else!"

Almond Power Bars
2 cups almonds (I sprouted mine and then dehydrated them.)
½ cup flax meal (flax seeds ground in a blender)
½ cup shredded coconut (unsweetened)
½ cup homemade nut butter, peanut butter, or almond butter
½ teaspoon celtic sea salt
½ cup coconut oil
1 tablespoon honey
1 tablespoon vanilla extract
1 cup dark chocolate

Place almonds, flax meal, shredded coconut, almond butter and salt in a food processor
Pulse briefly, about 10 seconds
In a small sauce pan, melt coconut oil over very low heat
Remove coconut oil from stove, stir honey and vanilla into oil
Add coconut oil mixture to food processor and pulse until ingredients form a coarse paste
Press mixture into an 8 x 8 baking dish
Chill in refrigerator for 1 hour, until mixture hardens

In a small saucepan, melt chocolate over very low heat, stirring continuously
Spread melted chocolate over bars; return to refrigerator for 30 minutes, until chocolate hardens
Remove from refrigerator, cut into bars and serve

Makes 20 bars

  1. I just wanted to say that my husband grabs those gross paper tasting store bought energy bars on his way out to the gym. I made your energy bar, asked him to try it (he ususally isn't too keen to my homemade NT foods), and HE LOVED IT!!! Your energy bars are "awesome" - in his words. That is a great change for him.   2. I'm so glad!! I do love these bars. =) I'm going to try to incorporate more raw foods into my diet (a post about that soon) so I'm glad to have this one tucked in my back pocket. Let me know if you make any changes or brilliant discoveries that other readers should know about! =)

  3. My ds seems to react to chocolate--any other recs for what to melt and spread on the top (maybe a nut butter--or would that be too melty/not solid?) Will they hold together w/out the chocolate on top?

    You could try:

    3/4 cup carob powder
    scant 1/4 cup of honey (I've used 1 T with good results - depends on your sweet tooth)
    1 cup coconut oil
    1 tablespoon vanilla extract (sometimes I omit this depending on availability)
    and a pinch of sea salt

    That's what I use for my peanut butter cups and coconut candies and it's yummy! Let me know how it turns out if you decide to go this route!
