Mushroom Leek Kiku



I love my spinach kiku recipe, but I wanted a bit of a change. I bought a leek and some small white mushrooms last week, and have been contemplating their fate. After getting some fresh eggs from a local farm, I knew I had to make a Kiku 2.0 I think I like it better than the spinach version, but we'll see if the novelty wears off!

1 leek, sliced thinly
1 c mushrooms, sliced
6 eggs
4 cloves peeled crushed garlic
1.5 T sea salt
1/2 t thyme
1 t pepper
paprika

Saute leek and mushrooms in butter or olive oil til soft.



Combine remaining ingredients except paprika and whisk to combine.



Pour into olive oiled (key for clean-up!) 9 x 13 pan. Sprinkle generously with paprika.

Bake about 30 minutes at 375 F.


This is delicious cold or hot. I bring portions for a quick, easy lunch too. I bet this would have been great with some Parm or even blue cheese baked in!
