Vegetable Leek Medley

This is an easy, delicious lunch. Serve with warm pitas.

This meal is a great source of vitamin C, vitamin A, folic acid, fiber and B complex. Who needs vitamins when you can have a meal like this?!

Serves 6

2 medium leeks
2 zucchini
2 carrots
1 red pepper
4 T butter
sea salt and pepper

Clean leeks well.
Slice crosswise in thin strips.
Make large cuts of the zucchini peel and cut into thin strips. (Save insides for soup.)
Cut carrots and red pepper into thing strips.
Saute carrots and leeks in butter.
When they are tender, add peppers and cook 1 minute.
Add zucchini for one more minute.
Season to taste.
