Lentil (or Pea) Soup

I love lentil soup! It's so easy, filling, and delicious. This soup will make about 8 servings.

3 medium onions, chopped or sliced
3 carrots, sliced
2 T butter
8 cups of stock or water/stock combo
2 cups of lentils or peas, preferably soaked overnight in water and 1 T of whey/yogurt/lemon juice
1 T thyme
pepper

optional:
lemon juice
creme fraiche
Ham hock - for pea soup

Saute onions and carrots in butter.

When veggies are soft, add stock and lentils or peas, and boil.

There will probably be some scum that rises to the top - scoop it off.

Cover, simmer, about 30 minutes, until lentils or peas are soft.

You can eat the soup like this, or puree it with a handheld blender.

Add lemon juice, salt, pepper and/or creme fraiche to taste!
