Local Lamb

One of the things I said I was thankful for is Indian rice. One of my favorite winter meals is some combination of lamb, yogurt, turmeric, cumin, and rice. Mark thawed out some of our locally raised lamb chops and we had lamb chops marinated overnight in yogurt with cardamom, simmered in chicken brother with turmeric, cumin, nutmeg, garlic, sauteed red onions, and a pinch of mustard. I made some no-knead bread, and threw on a pot of rice. (2 cups of rice soaking overnight in four cups of water with some whey, added to two tablespoons of butter - salt to taste!) What a great meal!

Tomorrow, I'll have left over rice with some raisins and cashews, and dried coconut thrown in!
