That process should last about 10 - 14 days. And yes, you feed a new fig or whatever fruit you're using each time you strain - which may not necessarily be every day. (Fresh fruit needs to be changed daily, but dried fruit can last a week.) I feed them a new fig a day? So far they are about 6 days in sugar water converting over. I think it takes 2 weeks.
