Bananas 'n Honey Polenta Toast
That's what I had for breakfast today. I even snuck in a small amount of peanut butter on one of the pieces, but thankfully I wasn't a big fan. Peanut butter is my kryptonite, but I prefer not to eat too much of it due to aflatoxin concern, as well as the fact that the nuts are never soaked. (I haven't made my own yet, and honestly doubt I will.) I made polenta sticks to go with our chili last night, so I had some left over. I popped them in the toaster this morning, drizzled some honey over them, and added sliced bananas, and it was a great alternative to my favorite sourdough banana sandwich!
