Chicken (or turkey or lamb) apple sausages
We still have a few cuts of lamb hanging around in the freezer, but the package of ground lamb was so small that I didn't quite know what to do with it. Last night though, I had a Eureeka! moment. I decided to try out that chicken sausage recipe with the lamb. It was even better than I thought, and so simple. Now Mark and I have a great source of quick protein in the mornings.
Makes 7 two inch patties
1 lb ground beef
1/2 cup dried apples, chopped
2 T sage
1 t salt
1 t pepper
1/4 t allspice
Mix ingredients and shape into 2 inch patties.
Fry in coconut oil, olive oil, or lard until golden brown.
